Almond/Cornflake Biscuits
Delicious, slightly sweet biscuits with roasted almonds and crunchy cornflakes that go well with a cup of tea.

Ingredients

| 1 | egg |
| 1/2 cup | caster sugar |
| 125 g | melted butter |
| 1 tsp | vanilla essence |
| 1/2 tsp | all-spice |
| 1/2 tsp | cinnamon powder |
| 1 cup | roasted almonds (smashed and chunky) |
| 1 tbspn + | lemon or organge zest |
| 1 1/4 cups | self-raising flour |
| lightly crushed cornflakes |
Method
- Preheat oven to 200c
- Beat egg and 1/2 cup sugar in a large bowl until foamy
- Stir in the following:
- 125 g melted butter,
- 1tsp vanilla essence,
- 1/2 tsp all-spice,
- 1/2 tsp cinnamon powder,
- 1 tbpsn lemon or orange zest
- Stir in 1 cup crushed roasted almonds
- Add 1 1/4 cup self raising flour gradually, adding more if too soft
- Roll spoonfulls of batter in crushed cornflakes, coating
- Put balls onto trays lined with baking paper, squashing a little
- Bake for 10-12 minutes, rotating halfway through
- Let cool on a rack
