Almond/Cornflake Biscuits

Delicious, slightly sweet biscuits with roasted almonds and crunchy cornflakes that go well with a cup of tea.

Ingredients

Quantity Ingredient
1 egg
1/2 cup caster sugar
125 g melted butter
1 tsp vanilla essence
1/2 tsp all-spice
1/2 tsp cinnamon powder
1 cup roasted almonds (smashed and chunky)
1 tbspn + lemon or organge zest
1 1/4 cups self-raising flour
  lightly crushed cornflakes

Method

  1. Preheat oven to 200c
  2. Beat egg and 1/2 cup sugar in a large bowl until foamy
  3. Stir in the following:
    • 125 g melted butter,
    • 1tsp vanilla essence,
    • 1/2 tsp all-spice,
    • 1/2 tsp cinnamon powder,
    • 1 tbpsn lemon or orange zest
  4. Stir in 1 cup crushed roasted almonds
  5. Add 1 1/4 cup self raising flour gradually, adding more if too soft
  6. Roll spoonfulls of batter in crushed cornflakes, coating
  7. Put balls onto trays lined with baking paper, squashing a little
  8. Bake for 10-12 minutes, rotating halfway through
  9. Let cool on a rack
