Anzac Biscuits
The classic ANZAC biscuit. Slightly chewy as per my preference.

Ingredients

110 grams | rolled oats |
110 grams | desiccated Coconut |
150 grams | plain flour |
220 grams | brown sugar |
90 grams | golden syrup |
150 grams | unsalted butter |
3 grams(1/2 tsp) | bicarb soda |
15 ml(1 tbsp) | water |
pinch | salt |
Method
- Preheat oven to 180C
- Combine the following dry ingredients in a mixing bowl:
- 110 grams rolled oats
- 110 grams desiccated coconut
- 150 grams plain flour
- pinch salt
- Heat the following ingredients in a saucepan on medium heat until sugar dissolves
- 220 grams brown sugar
- 150 grams unsalted butter
- 90 grams golden syrup
- Take the saucepan off the heat and stir in:
- 3 grams of bicarb soda mixed in 15 ml of water
- Add the hot liquid to the dry ingredients in the mixing bowl
- Spoon out 24 tablespoon sized balls onto a baking paper lined tray
- bake for 10-12 minutes until golden
- cool on a wire rack.
