Mustard Cauliflower Cheese
A creamy winter warming dish, great as a side or a main, accompanied with rice or mash.

1 | large cauliflower (broken into ~4cm peices) |
30 g | unsalted butter |
1 | small onion (finely diced) |
1 1/2 tsp | cumin seeds |
1 tsp | medium curry powder |
1 tsp | mustard powder |
2 | green chillies (deseeded, finely diced) |
3/4 tsp | black mustard seeds |
200 ml | double cream |
120 g | tasty cheese (grated) |
15 g | breadcrumbs |
1/2 cup | parsley (finely chopped) |
salt |
Method
- Preheat oven to 180 C (fan forced)
- Steam cauliflower for 5 minutes
- In oven proof pan/pot, and cook on medium heat on a stovetop, Add Butter and Onion and saute for 8 minutes
- Add cumin seeds, curry powder, mustard powder and chillies and cook for 3 minutes, stirring occaisionally
- Add the mustard seeds, cook for another minute
- Pour in cream, add 100g of cheese and 1/2 tsp salt, simmer for 2-3 minutes, for sauce to thicken slightly.
- Add cauliflowr, simmer for 1 minute, remove from heat.
- Sprinkle remaining 20 g of cheese, breadcrumbs and parsley over the cauliflower.
- Place in oven, bake for 8 minutes.
- Turn grill to high and grill for further 4 minutes, or until top is golden and crisp.
Serving
Makes a good side dish, or a great meal on its own.
