Easy one layer Orange and Poppy Seed Cake

Ingredients

Quantity Ingredient
210 grams all purpose flour
200 grams caster sugar
120 ml (~105 g) vegetable oil
2 large eggs
2 tablespoons poppy seeds
  zest of one orange
3 tablespoons (45 g) fresh orange juice (about one orange)
1 tsp (4g) vanilla extract
120 g greek yogurt
60 ml milk
1/4 tsp salt
10 g baking powder

Method

  1. Heat oven to 180 degrees celsius/160 fan forced.
  2. Grease and line a 21cm cake tin
  3. In a mixing bowl, combine
    • 210 grams flour
    • 200 grams caster sugar
    • 10 grams baking powder
    • 1/4 tsp (1g) salt
    • 2 tablespoons poppy seeds
    • zest of one orange
  4. In a seperate mixing bowl, whisk together
    • 120 ml (105 grams) vegetable oil
    • 1 tsp (4g) vanilla extract
    • 2 eggs
    • 3 tablespoons (45 g) orange juice
  5. Combine wet ingedients into dry ingredients mixing bowl
  6. Add 120 grams (1/2 cup) greek yogurt, mix in
  7. Bake for 35-40 minutes or until skewer comes out clean
  8. Cool for 10 minutes in pan before turning out on a rack to cool.
