Pasta Dough
Basic egg pasta dough recipe.

Quantity | Ingredient |

1 cup | ‘00’ flour |
1 cup | fine semolina flour |
8 | eggs |
1 tbspn | olive oil |
1 tsp | salt |
Method
- In a small bowl, whisk together 6 egg yolks and 2 whole eggs and 1 tbspn olive oil,
- In a large bowl, mix together 1 cup ‘00’ flour, 1 cup semolina flour, and 1 tsp salt
- Add the liquid to the large bowl and combine together until a dough has started forming
- Turn out dough onto a surface floured with more ‘00’ flour.
- Knead dough for at least 5 minutes.
- Rest dough for at least half an hour under a damp cloth.
