Pasta Dough

Basic egg pasta dough recipe.

Ingredients

Quantity Ingredient
1 cup ‘00’ flour
1 cup fine semolina flour
8 eggs
1 tbspn olive oil
1 tsp salt

Method

  1. In a small bowl, whisk together 6 egg yolks and 2 whole eggs and 1 tbspn olive oil,
  2. In a large bowl, mix together 1 cup ‘00’ flour, 1 cup semolina flour, and 1 tsp salt
  3. Add the liquid to the large bowl and combine together until a dough has started forming
  4. Turn out dough onto a surface floured with more ‘00’ flour.
  5. Knead dough for at least 5 minutes.
  6. Rest dough for at least half an hour under a damp cloth.
