Vegetable Semolina Porridge
Semolina porridge, topped with a selection of tasty greens.

Ingredients
| Quantity | Ingredient |
| 25 grams | unsalted butter |
| 3 cloves | garlic |
| 1 | large zucchini |
| 100 grams | peas |
| 1 tsp | lemon zest |
| 1tsp | oregano |
| 300 ml | milk |
| 90 grams | semolina |
| 50 grams | hard cheese eg. pecorino |
Method
- In a pan on medium-high heat, fry together
- 25 grams butter
- 3 crushed cloves of garlic
- one zucchini, cut into thin slices.
- 1/2 teaspoon of salt,
- add pepper
- continue to fry until zucchini is soft.
- Reduce head to low and continue to cook for 5 minutes
- Stir in peas and warm through for 1 minute.
- Remove from heat.
- Stir in 1 tsp oregano and 1 tsp lemon zest.
- In a medium sauce pan on medium high heat, bring the following to boil:
- 300 ml milk
- 300 ml water
- pinch salt
- pinch pepper
- Add 90 grams semolina, whisking continuously for 3-4 minutes until smooth and thick like porridge.
- Remove from heat and stir in 40 grams hard cheese.
- To serve, divide semolina mixture into bowls, top with vegetables remaining hard cheese and a drizzle of olive oil.
